Gruel:- Boil 20 cups (4 litres) of water with 1 cup (200g) of washed Double Horse Broken wheat. Cook on medium ?ame until it’s well cooked, add required salt, coconut scrapping(if preferred) and serve hot.
Uppuma:-Heat oil and splutter mustard. Fry one chopped onion, 1/2tsp Bengal gram dal,1/2tsp of black gram dal (split urad dal) and saute till golden brown. Add one piece of chopped ginger, green chillies, curry leaves. Add 2 1/2cups of (500ml) water and required salt to the mix and boil. Add 1 cup(200g) of Double Horse Broken Wheat, keep stirring and cook for 10 minutes. Garnish with fried raisins and cashews nuts.
Wheat payasam: Wash and pressure cook 1cup (200g) double Horse Broken Wheat 2 1/2 cups(500ml) of water for 3 whistles. Once the pressure cooker settles, open the cooker and add the second extract of coconut milk 21/2 cup(500ml)from two coconuts. Add jaggery syrup( 400ml) and allow to cook till it becomes thick and the raw smell of jaggery goes o?. Then add 1 1/2(300ml) of the ?rst extract of coconut milk and just boil it. Remove from ?ame add fried cashew, raisins and cardamom powder. Serve hot.
